Description
This self-described ‘Handy Guide to the Great Packing Industry’ was published by Rand McNally in 1907, the year after the debut of Upton Sinclair’s ‘The Jungle’ shed much light on the widespread unsanitary practices in Chicago’s Union Stockyards. The volume is a clear industry counterpoint to Sinclair’s well-founded claims (he worked undercover for several weeks), outlining the economic importance of the stockyards, the entrepreneurial spirit of its workers, regular government inspections, production processes, wage scales, and more. Numerous photographs (most rather grim) and a list of practical recipes for sausages, head cheese, bologna, etc., are also included.
